Passion Fruit Cheesecake |
Simple, elegant, dripping with passion.. simply irresistible and will always leave those you feed begging for more.
The bigger the better they say... this is a large cheesecake, so you can halve it
Biscuit base of your choice. I used 2 x Coconut or (Bakers Tennis biscuits) and melted butter
2 tubs whipped cream
2 tubs cream cheese
2 tins condensed milk
1 cup of fresh lemon juice
2 tubs of passion fruit pulp
rind of a lemon
Meringues and black figs for the topping .. if you like, you can omit
Put it together
Simply make the biscuit base by crushing biscuits, adding melted butter, place in the bottom of your tin. Only use half here.
Whip the cream, add the cream cheese, condensed milk and lemon juice. Gently whip all together, add the pulp of the passion fruit.
Add the rind of a lemon.
Place a half the mixture ontop of the biscuit mixture, then layer another biscuit layer.
Set in the fridge for as close to 24 hours as possible.
Place the meringues ontop and fruit of your choice. Drizzle with passion fruit pulp..
