 Breakfast is without a doubt the most important meal of the day. Not only do you get most of your energy from eating breakfast but after a long sleep what is better than waking up and eating something tasty? Perhaps eating it with someone in bed to get things started.

Creamed Eggs & Salmon on Toasted Croissant

Simple, elegant & tasty way to start the day...
What I love about cooking is the simplicity of it.. I like uncomplicated but gorgeous combinations that work such as creamed eggs & salmon on a croissant.

All you need for two of you is some fresh salmon preferably smoked, 2 fresh oven baked croissants & creamed eggs. Creamed eggs & scrambled eggs are not the same thing. I like the eggs to be creamy and not crumbly. Use 4 fresh free range eggs together with a quarter cup of milk or fresh cream, salt to taste, knob of butter and fresh Parmesan cheese. In a pan on medium heat, non stick of course, melt a bit of butter and add the mixture after whisking. Gently run a wooden spoon through the eggs, not mixing but gently stroking the spoon through the eggs till they come together, don't over cook.  Layer the salmon then add eggs and sprinkle with chives.. enjoy together with some good coffee.
